A Vegan Butternut Squash Recipe
If you're looking for a great vegan butternut squash recipe, try this butternut squash ravioli. It's sensational, nutritious, and very quick and easy to make.
And why is it so easy to make? Basically because you actually don't have to make it! I found this delicious ravioli in the freezer section at Whole Foods. Just look for the Rising Moon Organics Butternut Squash Ravioli.
I just whipped up a light sage sauce to go with it, which really enhanced the flavor, and took no time to make.
You'll need:
1 package Rising Moon Butternut Squash Ravioli
5 tbsp olive oil
1/4 cup chopped onion
1 tbsp chopped fresh sage
2 pinches rosemary
1 tbsp Earth Balance organic spread
pinch salt
Follow the directions on the Rising Moon package to boil up the ravioli. Meanwhile, in a small saucepan, sauté the onions, sage, and rosemary in the olive oil over a low heat until the onion is transluscent. Stir in the Earth Balance spread and continue to sauté for another minute or so.
Be sure to use the organic version of the Earth Balance. Although even organic soy cannot escape the GMO taint these days, at least with organic, you're getting a healthier version.
When the ravioli is done and has been strained, simply pour the sauce over the top and serve. I like to cook this with a side of sautéed spinach and pine nuts. Yum!
