Every plant eater needs a core arsenal of recipes and meal ideas that cover the six nutrition essentials. These quick and easy vegan recipes are some of my favorites. Most of them are 30 minute recipes. Some may take a little longer than 30 minutes to cook, especially the soups, but the prep time is pretty short for almost all of them.


Main Dishes

One of the main things a vegan main course should have is protein. All these recipes except for the ravioli have plenty of protein. If you find that a main dish is missing protein you can always add what you need by sprinkling either the main dish or a side dish with a couple of tablespoons of hemp seed.

When I make soup I always make a big vat of it. It stays good for ages and that way there is always something quick and easy to grab if I’m in a hurry or just don’t feel like cooking.

Vegan Smoothies and Beverages

Smoothies are a true staple of both vegan and raw diets, and a great way to blend in all the nutritional necessaries like protein powders and nutritional yeast. If you want to make great smoothies, I recommend the Blendtec Blender.

Vegan Salads and Dressings

These salads are perfect sides for the main courses above – or you can make them a bit bigger and have them as a main course. If you do though, just be sure to add some hemp seed or sprouts to insure that you get your protein!

Vegan Appetizers, Snacks, and Side-Dishes

These dishes are small and really quick to make. Big taste in small portions.
