Nut Milk, Cheese and Butter
Raw nut milk makes a great base for smoothies and desserts - plus it's great with raw granola! Here are some easy recipes to try. You may want to take a look at the raw food equipment page to see what you'll need to set up a raw food kitcen and pantry.
Almond Milk
This one is great to use in vegan smoothies. I substitute it for soy milk in my favorite chocolate smoothie.
You'll need:
1 cup raw almonds soaked 2 hours to overnight
4 cups filtered water
4 pitted dates soaked for at least 1/2 hour
1 tb organic alcohol-free vanilla
1/8 tsp salt
Blend almonds, dates, vanilla and salt in a high-speed blender until the mixture is smooth and creamy. Pour it into a container through a straining bag and squeeze until there is at least 4 cups of milk in the container. Save the pulp for use in dessert recipes like the raw fruit tart.

Hemp Seed Milk
Hemp is one of the best sources of protein, fiber and minerals around. Use this milk in raw cereals, smoothies, or just as a refreshing drink.
You'll need:
1 cup organic raw hemp hearts
4 cups filtered water
1/2 cup raw agave nectar
1/8 tsp salt
Combine ingredients in a high speed blender, empty into a pitcher, chill and serve.
