Grated Apple and Carrot
Amongst numerous simple and quick vegetarian recipe ideas for breakfast, I really like this very simple and easy-to-prepare breakfast:
Grated Apple and Carrot with Nuts and Seeds
Ingredients for one portion
1 Apple (best is Braeburn or Jonathan)
1 medium Carrot
5 Walnuts, Almonds or your favourite nuts
1 tblspoon Flax seeds
1 tblspoon of fresh Lemon juice
Preparation
Grate the apple and carrot into the bowl, chop and mix the walnut or almond halves into it and sprinkle the lemon juice and flax seed onto it.
This is a delicious and refreshing, high fiber and low fat breakfast. Preparation will take less than making a traditional toast and egg.
You will feel much more energized, ready for action!
