Raw Vanilla Blueberry Granola

Raw Blueberry GranolaWhen you think about a raw food breakfast, think granola! Make a big batch of this granola and keep it in a sealed canister - it will last a while! I usually have this with almond milk - Yum!

You'll need:
1 bag Bob's Red Mill Raw Buckwheat Groats, soaked 2 hours to overnight
5 dried figs, saoked 1 hour to overnight
5 pitted dates, soaked 1 hour to overnight
1 tbsp alcohol-free vanilla extract
1 10 oz package frozen blueberries
1/2 cup almonds, soaked 1 hour to overnight
1/2 tsp cinnamon
1/4 cup agave nectar
3/4 cup fresh blueberries

In a food processor, combine figs, dates, vanilla, frozen blueberries, cinnamon and agave nectar. Meanwhile, rinse and drain your buckwheat groats - make sure you do this thoroughly and rinse several times. Rinse and drain almonds and chop coarsely. Add the mixture from the food processor to the buckwheat groats and use a large spoon to mix completely. Stir in almonds and fresh blueberries.

Spread the mixture out evenly on two teflex sheets and place in the dehydrator on the mesh trays for 24 hours. Take one of the trays out, put an empty tray on top of the dried granola, and holding the two trays together, flip the granola and peel of the teflex sheet. Do this for the second tray of granola and place the two trays of granola back in the dehydrator for another 24 hours.

Remove from the dehydrator and crumble coarsely into a container so that chunks form. Seal the container - the granola will keep for a week or two. Serve with almond milk.


Mixed Berries with Almond Cream

This is a sweet and simple raw food breakfast. Berries, especially blueberries, contain great nutrients and anti-oxidents.

You'll need:
1 cup blueberries, strawberries, blackberries or mixed berries
1 tsp raw blue agave
1/2 cup almond cream

In a cereal bowl, mix berries and agave nectar. Top with almond cream.
