Raw Food Snacks, Spreads and Dips

These raw food snacks are actually more of a staple than you might think - they are an essential part of a living raw food diet. The spreads can be used in appetizers, but can also form the basis for wraps and stuffings. The dips can be used for fruits, veggies or dessert toppings. Keep a few on hand in the fridge for guilt-free munchies relief! Enjoy!

Walnut and Sun-Dried Tomato Paté

Raw Walnut Spread on CeleryThis spread is great on wraps or crackers, or stuffed in mushrooms, peppers or celery.

You'll need:
1 cup raw walnuts soaked in filtered water anywhere from 2 hours to overnight
3/4 cup sun-dried tomatoes soaked in a little over 1 cup of filtered water for about half an hour
splash of the reserved tomato soak water
1/2 handful of fresh basil
1 tbsp organic expeller pressed extra virgin olive oil or hemp oil
juice of 1/2 a small lemon
1 tbsp Nama Shoyu
1 small clove garlic, pressed or finely chopped
1/4 tsp salt

Combine ingredients in a food processor starting with the walnuts and tomatoes. Blend them for a minute or so until they have broken up a little bit, then add the other ingredients.

Pear Ginger Chutney

Pear Ginger ChutneyThis is a great sweet and spicy side dish. Serve with the raw samosas or mix it with some romaine to make a great salad. I often just eat it on its own - it's one of the best raw food snacks!

You'll need:
1/2 cup dates
Juice of 2 oranges freshly squeezed
1/2 tsp corriander
1 tsp fresh ginger
Pinch of salt
1/2 cucumber, peeled and diced
1 large pear, peeled and diced
1 tsp onion, finely minced
1 tbsp fresh mint, finely minced

Soak the dates in orange juice for about an hour. Place the cucumber, pear, onion and mint in a mixing bowl and mix well. Blend the dates, orange juice, ginger, corriander, and salt in a food processor with the S blade. Pour the date and orange juice mixture over the pear and cucumber mix and stir well. You can serve this immediately, but it's better when you give the liquid a bit of time to soak into the pear and cucumber. Either way works!
