Raw Soup

Raw soup is incredibly quick and easy to make, especially in a Blendtec or Vitamix. These blenders will not only whip up your raw ingredients into a smooth and creamy soup, but they will gently warm the soup to 114-116° so it is ready instantly. Whip up some soup and throw it in a thermos in the morning to make a great and filling lunch, or have dinner ready in 5 minutes after a long day.

Raw Tomato Vegetable Soup

Veggies in BlenderThis raw soup is inexpensive, and takes about 5 minutes to prepare in a high speed blender. I've listed the basic ingredients here, but you can add any other vegetables that take your fancy!

In a high speed blender combine:
2 cups water
1/2 small onion
2 carrots with greens
1 small clove garlic
1 stalk celery
2 - medium tomatoes, roughly chopped
1 small handful of greens, such as spinach, Kale, Swiss Chard, Okra, or Collard Greens

Blend for about 90 seconds, or until soup warms up. If you have a Blendtec, just use one soup cycle. The soup will warm to about 115°. Otherwise you can use and instant read thermometer to keep tabs on the temperature.

Raw Cucumber Dill Soup

Raw Cucumber SoupThis soup is great warm or cold. Serve with celery and Walnut and Sun-Dried Tomato Paté. Makes a great lunch, or light dinner.

In a high-speed blender combine:
2 cucumbers rinsed (I keep the peel on because it's more nutritious, but you can peel them if you want)
3 cups filtered water
1 stalk celery
1/2 avocado
1 small clove garlic
2 tbsp olive oil
juice of 1/2 a lemon
1 tbsp agave nectar
2 tsp fresh dill
1/4 of a small onion
1 tsp salt

Blend for about 90 seconds or until soup warms up to about 115° on aninstant read thermomenter. Use the soup cycle if you have a Blendtec.
