Vegan Pie Crust
There's a little bit of pecan in this vegan pie crust recipe, which gives it a sweet, nutty flavor.
A vegan version of pie crust is easy to make and can serve as a foundation for many vegan baking recipes.
Be sure to use the pre-baking technique to make sure that the crust stays firmer underneath your filling.
You'll need:
2 cups organic whole wheat pastry flour
1 cup pecans, chopped coarsely
1 tsp sea salt
1 tbsp turbinado

1 cup Earth Balance Organic spread
To pre-bake - pre-heat oven to 425°. Combine all ingredients in a food processor and mix until a doughy ball is formed. Remove and press evenly into a 9 inch pie plate.
Prick the bottom of the crust in several places with a fork. Place a piece of aluminum foil on the bottom of the crust and cover it with a handful of dried pasta - this is to prevent the bottom of the crust from rising when you pre-bake it.
Place the crust in the oven for about 8 minutes until it is slightly brown. Remove from oven and turn oven temp down to 350°.
