Vegan Sandwiches
How do you make the best vegan sandwiches? Stuff and wrap them! Check out this delicious veggie sandwich - serve it hot or cold and add lots of avocado to make it a superfood sandwich! The other great key ingredients are balsamic vinegar, and hummus. Enjoy!
You'll need:
1/2 onion chopped crosswise so that layers form long, thin slivers
1 red pepper cut into long, thin strips
1 green pepper cut into long, thin strips
1/2 yellow squash cut into long thin strips
1 large Portobello mushroom cap, cut into thin strips
1/2 avocado cut into long, thin strips
4 tbsp hummus - I recommend the Yorgo brand. It doesn't have preservatives.
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tap dried basil
2 large whole wheat wraps
Several toothpicks
In a large saucepan, heat oil, vinegar and basil for a minute over a low flame until the basil starts to sizzle a bit. Add the onion and sauté until it is translucent. Add the peppers, stir in well, and let them simmer for a couple of minutes. Next add the mushrooms and continue to cook until they soften. Finally, add the squash and continue to sauté the whole mixture for another two to three minutes.
Meanwhile, prepare your wraps by spreading the hummus evenly over the whole thing. Add sautéed veggies and spread them evenly, but not too thickly over the lower half of the wrap circle and lay the avocado slices on top of them. Roll each wrap tightly and secure it with toothpicks. Slice on a diagonal for a nicer presentation.
The great thing about this veggie sandwich is that you can serve it warm, with the veggies right out of the pan, or you can save the veggies in the fridge and serve the sandwich cold later. Serve with some home brewed iced tea, or lemonade.
